What a ceiling fan needs
Above the ceiling there has to be a void deep enough for the fan body and for the duct, which runs from the fan to the outside. Lay the duct with a fall away from the fan. That way condensation inside it drains outward and not back into the room.

With a timer, the fan keeps running for a set time after it is switched off, long enough for the remaining moisture to clear.

Ratings
Bodies are plastic, with moisture ratings of IP45, IPX4 and IP44. On most models a backdraft shutter stops cold air coming back through the fan while it is off. If the ceiling void is too shallow for a fan, an in-line extractor fan can sit in the duct run instead.
